Well, folks. Here she is. I have been working really hard to feature some things that I'm both newly excited about and staples that I have come to depend whole heartedly on as mandatory ingredients in my kitchen. The beauty of being invited to cook at a place like The Catbird Seat is so incredibly multi-layered. Besides being a ridiculous boon to one's excitement and food nerdiness, it also encourages you to step out of your regular modus operandi and get playful and have fun in a new way.
Our Catbird Seat Supper will be a bit themed - mainly because I think it's fun and also because I'd like to talk about one ingredient that really inspired me above many others when I was a budding pastry chef in the City House kitchen. This guy, a fella who has now become a dear friend and true and honest confidante, named Thomas Williams showed up to the kitchen with a black milk crate full of Cruze's milk. He sauntered up to my pastry table, and without introducing himself, said "This buttermilk will change everything you're doing right now". Tandy, my chef, was standing behind him nodding like a crazed lunatic. He grabbed a coffee mug and poured me some immediately. We all stood around that kitchen, sipping this buttermilk, with our eyes glossed over as if we were drinking liquid gold. It was THAT good. And it did change a lot about what I was doing on that pastry table six years ago. It started to appear as either the star of my gelato selections or as an accompaniment to my dessert menu. And, it remains that way to this day.
This menu will reflect that inspiration and play off our our name sake and be very buttermilk-centric. The menu will have two cocktails to choose between when you arrive and there will be a light snack of okra chips as you arrive. It will be a five course tasting menu with an aperitif and wine pairings for each course.
I have a lot more to share about the inspiration for this evening at Catbird, but I will save it for future blog entries as I am preparing for this Supper.
This Supper is limited to 20 people, as The Catbird Seat is a delightfully small venue. The prix fixe donation for five courses, with cocktails, aperitif, and wine pairings will be $120 per person.
